Did you realise the scraps which you throw in trash while cooking meals could also be turned into delicious recipes? That apple or watermelon peels or seeds that you last discarded could actually be converted into lip-smacking chutney! Not just this, there are several other wonder recipes that have been presented in veteran chef Davinder Kumar’s latest book Second Meals.

“The scraps of fruits and vegetables are rich in nutrients but are thrown away as people don’t know what to do with them. This amounts to a lot of food waste in a way,” the chef said. The book, brought out by Shubhi publication, aims to encourage cooking and eating every single part of veggies and fruits. “It is important that we share this knowledge with our youth which is going away from nature,” said the chef who is also celebrating 50 years of his glorious journey in the hospitality industry.

Over the past five decades, he has travelled extensively and worked with prestigious hotel chains. But he refuses to slow down. He is already working on his next book, which focuses on ‘authentic Indian dishes’. Good luck, chef!
