Flavours from the Valley are ready to be served for Delhi’s foodies
Well, for many months now, we haven’t got an ideal situation to visit the Kashmir Valley. However, if you live in Delhi and lust for Kashmiri food, here’s a chance to whet your appetite. The Grand, Vasant Kunj, is hosting a special food week, offering authentic flavours from Kashmir. Bonus? They are also stocking some genuine Kashmiri collectibles and clothes.
Curated by Sunil Tickoo’s Saal, the kitchen keeps in mind the two distinct cooking styles of the valley: Kashmiri Pundit style, influenced by distinctive flavours of freshly grounded red Kashmiri chillies, traditional Kashmiri Var masala, fennel, ginger powder, and Kashmiri Wazwan cuisine, finding roots in Persian cuisine. While Kashmiri Muslim cuisine is partial to onions, garlic and tomatoes, the authentic Pundit cuisine is absolutely devoid of them, be it non-vegetarian or vegetarian cuisine.
In conversation with Born of Web, The Grand’s Executive Sous Chef Sanjay Browne, says, “Kashmiri food is the richest cuisine in terms of flavour, hotness or even fat-content, pan Asia. We have sourced all ingredients from the Valley. We have also got Kashmiri Wazas in our team.” The chef has worked with Hyatt Regency, JP Group of hotels, ITC to name a few.
You can gorge on dishes like Gosthaba, Tabak Maza, Rista, Nadur Yakhni, Gaad Nadur, Rogan Josh and Haak. The dinner buffet also includes classic dessert specialties like Shufta and Phirni.
“The beauty of Kashmiri cuisine is the treatment to spices, which are instead of frying are grounded into an emulsion which is then stirred into the curry. This brings out the unique aroma and flavor of the cuisine,” Browne adds.
